Monday through Thursday I look for quick easy home-cooked meals. I work long hours, but my family and I prefer to eat at home. Not always an easy task with a home full of foodies… we constantly look for new ideas and combinations. Here is a quick meal you can put together in about 40 minutes.


Cajun Shrimp with Red Beans & Rice

Ingredients

  • Ingredients for Shrimp:
  • · 1 Tbsp Modern Masala's Mississippi Masala
  • · 1 lb Shrimp (I use the 16-20 count) – defrosted, shell off and deveined
  • · Oil to coat pan
  • Ingredients for Cabbage:
  • · 1 tsp Modern Masala's Himalayan Salt and Fancy Pepper
  • · 1 tsp Modern Masala's Curry Powder
  • · ¼ head red cabbage
  • · ¼ head green cabbage
  • · Oil to coat pan
  • · 2 Tbsp Water
  • Ingredients for Rice:
  • · ¼ Yellow Onion - diced
  • · 3 whole All-Spice berries
  • · 3 large White Mushrooms – sliced
  • · 1 whole Habanero
  • · 2 Tbsp Butter
  • · Zatarain’s Red Bean and Rice mix
  • · 2 ¾ cup water

Directions

  1. Step 1: Marinate Shrimp
  2. 1. Sprinkle MM’s Mississippi Masala onto cleaned Shrimp and set aside.
  3. Step 2: Cook Rice
  4. 1. Heat butter in 3qt heavy bottom pot.
  5. 2. Add whole All-Spice in pot, heat for 15 secs.
  6. 3. Add diced onion to pot, cook until slightly browned, about 2 minutes.
  7. 4. Add rice mix to pot and stir for 1 minute.
  8. 5. Add water and stir.
  9. 6. Drop in whole habanero for flavor or cut in half if you enjoy the heat.
  10. 7. Stir occasionally until water boils.
  11. 8. Close lid and simmer on low for 25 minutes, stirring occasionally.
  12. Step 3: Sauté Cabbage
  13. 1. While the rice simmers, cut cabbage into 1” chunks.
  14. 2. Heat 12” skillet over medium heat.
  15. 3. Add oil to pan.
  16. 4. Add chopped cabbage to hot pan, sprinkle water and close lid. This creates steam.
  17. 5. Cook, stirring occasionally, until tender, approximately 5 minutes.
  18. 6. Add MM’s Himalayan Salt & Fancy Pepper and MM’s Curry Powder, stir and cook for another minute with lid off.
  19. 7. Transfer onto a serving platter or bowl.
  20. 8. Clean out skillet and return to medium-high heat.
  21. Step 4: Cook Shrimp
  22. 1. Add oil, sauté Shrimp, 2 minutes per side. Do not over crowd pan, cook in 2 batches.
  23. Step 5: Ready to Serve
  24. 1. Check rice at 25 minutes, fluff once ready.
  25. 2. Transfer onto serving platters or plate individually.
