Jackfruit tacos are an easy, meat-free meal any night of the week. Vegan or not, you'll be amazed with this delicious flavor packed recipe.
TIP - If you use canned Jackfruit, be sure to soak in cold water for 15 minutes and drain before using. Generally the young green Jackfruit comes in a brine and can be quite salty.
Ingredients
- 1 16 oz can Young Green Jackfruit, rinsed
- 1 tbsp Modern Masala's Let's Taco 'bout It
- 1 16 oz can Whole Black Beans, rinsed
- 1 4oz can Roast Green Chili's
- 1/4 cup Red Onion, diced
- 2 tsp Oil
- Taco Toppings:
- 1/4 cup Red Onion, diced
- 1/4 cup Red Bell Pepper, diced
- 1/4 cup Lettuce, chopped
- 1 tbsp Cilantro, chopped
- 1 Jalapeno, sliced, optional
- 1/2 cup Vegan Cheese (or any cheese you prefer)
- Hot Sauce or Salsa of your choice
Directions
- Heat cast iron skillet or pan
- Season Jackfruit with Let's Taco 'bout It
- Add oil to skillet, and drop in seasoned Jackfruit
- Sear and cook for 5-7 minutes on medium heat. Stir while breaking up the chucks. (You can also break it up before you start cooking, either works.)
- While it cooks, Chop up toppings. I used Lettuce, Red Pepper, Onion, Cilantro, Jalapeno.
- Stir in Black Beans, Onions, Roasted Green Chili. Remove from heat, adjust seasoning to taste.
- Melt (vegan) Cheese onto tortilla and build your Tacos.
Recipe Note
*The seasoned Jackfruit mixture is great in Taquitos, Flautas, Enchiladas, Tostadas, Quesadillas... or basically anything you feel like. π
Enjoy!!
