Arroz con Pollo



One of my husband’s favorite Latin dishes… Arroz con Pollo (literally translated, Rice with Chicken)
It's a weekday and you want something tasty for dinner, but you also don't want to spend your entire evening cooking and cleaning. I hear you, that’s me Monday through Thursday, and that's exactly why Arroz con Pollo is the perfect weeknight dinner. It's an easy one pot meal that doesn't taste like one, the chicken, rice, and vegetables simmer together, enhancing each other to create a flavorful meal in 30 minutes.
Here is a quick an easy Instant Pot recipe using Modern Masala’s Spanish Rice mix and Modern Masala's Let’s Taco ‘bout it.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Servings: 4

Ingredients

  • 1 lb - 1 ½ lbs chicken breast, cut into strips

  • 1 Tablespoon Modern Masala’s Let’s Taco ‘bout it

  • 2 Tablespoons oil, divided – I use olive oil

  • ½ red/green bell pepper, strips

  • ½ yellow onion, strips

  • 5 - 6 mushrooms, sliced

  • 3 - 4 cloves garlic, finely chopped

  • 1 packet Modern Masala’s Spanish Rice mix

  • 1 Tablespoon butter, optional

  • 2 cups Chicken broth (or water)

  • ½ teaspoon salt

  • Mexican cheese blend, shredded - for topping, optional

  • cilantro, finely chopped - for garnish

Instructions

  1. Prep the above, chop and pre-measure the ingredients first. It just makes cooking easier.

  2. To marinate Chicken, mix 1 Tablespoon oil, Modern Masala’s Let’s Taco ‘bout it, garlic and chicken until coated evenly. Set aside.

  3. Turn the Instant Pot to Sauté (Hi). Once hot add remainder oil and marinated chicken to pot. Cook stirring frequently for 1-2 mins.

  4. Add cut veggies to pot and cook for an additional 2 minutes.

  5. Add Modern Masala’s Spanish Rice mix and add sauté for 1 minute, stirring continuously.

  6. Add broth, Press Cancel on Instant Pot to stop heat. Mix well, deglazing the pot with a spatula to take out all the browning from the bottom of the pot.

  7. Add salt and butter, then stir.

  8. Close the Instant Pot and turn pressure valve to sealing. Select Rice mode, keep warm mode off if it turns on. Once the timer is done wait 10 minutes then turn valve to Quick release (Vent).

  9. Open the Instant Pot once the pressure has all released. Gently fluff the rice using a silicon spatula or fork to gently mix will also prevent the rice grains from breaking.

  10. Serve with cheese and cilantro sprinkled on top.
