Chicken Tikka Masala



Simple quick meals are my goal. I work long hours, but still want to cook my family a home cooked meal. Cook like a chef with my Tikka Masala spice blend and enjoy this Chicken Tikka Masala recipe. No fuss, just a quick easy recipe for you to enjoy at home without having to fuss over spice measurements.


Ingredients for Marinade:

  • 1/2 of the Modern Masala Tikka Masala spice packet

  • 1 1/2 Chicken Breasts (cut into 1 ½”cubes)

  • 1/2 cup Yogurt (Full-Fat)

  • 1 Tbsp Ghee or Oil

  • 2-3 Cloves Garlic – Minced

  • 1 Tbsp Ginger – Minced

  • Chili to taste - Minced

  • ½ Lemon - Juice


Instructions:

  1. Make marinade by mixing the contents of this package with the above ingredients (except chicken)

  2. Coat the chicken in the marinade. Cover and refrigerate 30 minutes or up to 24 hours prior to cooking.


Ingredients for the Curry

  • Remaining 1/2 of the Modern Masala Tikka Masala spice packet

  • 1 Tbsp Ghee or Oil

  • 1 Onion - Diced or Sliced

  • 1/4 Red Bell Pepper - Diced or Sliced

  • 1/4 cup Cashew Butter (or substitute with 1/2 heavy cream)

  • 1/8 cup Tomato Paste

  • 2-3 Cloves Garlic – Minced

  • 1 Tbsp Ginger – Minced

  • Chili to taste - Minced

  • 1 1/2 cup Water

Instructions:

  1. Heat Ghee or Oil in Dutch Oven or Heavy Bottom Pot over Medium Heat.

  2. Add Marinated Chicken and cook for 10-12 minutes.

  3. Add Onion and continue to cook for 10-12 minutes.

  4. Add remaining the remaining Modern Masala Tikka Masala spice packet Garlic, Ginger, Chili, Tomato Paste, Cashew Butter and Water, stir, cover and simmer on low heat for 20-25 minutes until chicken is tender, stiring occasionally.

  5. Add Bell Pepper, stir and simmer for an additional 10 minutes.


That's It!!

Serve with rice, naan, roti or tortilla and a side salad.
